Inside the food truck, Gavin Parys introduces his Sri Lankan culture through his tasty offerings and kind smile. Together with his wife Shehara, he rotates a short menu featuring family favorites that range from mild to their island-level hot.

Where is Sri Lanka? If you don’t know, you’re not alone. Gavin Parys says it’s the most common question he gets when newcomers approach the Ceylon Hut food truck, which he says is the only Sri Lankan restaurant in Florida. And if that’s true, I have found yet another reason to love living in Orlando.

Sri Lanka is a diverse and multicultural island country in the Indian Ocean, southeast of the southern tip of the Indian subcontinent. Due to geography and demographics, I expected the food might be similar to Indian food I’ve had before. It shared some surface-level similarities that would certainly appeal to fans of Indian cuisine, but was still very much its own thing.
